Konnichi wa, Nomidachi!

 
How are you keeping these days?

It's starting to feel a little darker, chillier, and damper in Seattle, but we're here to spread a little light and umami goodness.

Yes, it's also the time of year for us to begin receiving some of the once pasteurized delights known as hiyaoroshi sake from importer Japan Prestige Sake. We've just heard from our distributor that the first batch of the sake we ordered should arrive here in Seattle any day now and we're planning on beginning to take delivery next week.

Tasting notes and prices follow below. Our allotment is only a couple dozen bottles of each variety, so please get in touch ASAP if you're interested in reserving some bottles.

We anticipate the pricing will be the same as in past seasons, but please keep in mind the
10% "case" discount will still be in effect for orders of 6 or more bottles.

We haven't yet decided the order in which we will take delivery from the distributor, but your input/inquiries/orders will definitely help us to determine the schedule.

If you are interested, please place your
order by Saturday, October 26, and we will have the first couple selections available for pick up in store shortly thereafter (by next Tuesday, October 29 we're hoping).

The initial batch of 2024 hiyaoroshi sake from Japan Prestige includes:

Urakasumi Tokubetsu Junmai Hiyaoroshi (Miyagi)
Soft and lively, with deep, resonating umami. The mild spice in the pleasantly lingering finish perfectly embodies and brings to mind a crisp, mellow autumnal afternoon. Serve chilled or slightly warm. $55/720 ml
 
Harushika
Junmai Ginjo Hiyaoroshi (Nara)
Mild golden tint with notes of banana, apple, and licorice in the nose. Soft, smooth mouthfeel with pleasant fruitiness, a faint dairy note, and a little bit of heat on the palate. $55/720 ml
 
Kisoji Yamahai
Junmai Hiyaoroshi (Nagano)
Pronounced gold coloring with a fragrance suggesting the tarty sourness of green apple. Kiwi and strawberry fruitiness with a sweet acidic bite on the palate. Nice body and presence. $55/720 ml
 
Tsukasabotan Senchu Hassaku
Junmai Genshu Hiyaoroshi (Kochi)
Gorgeous, expansive aroma of citrus fruits. Very dry, sharp, and refreshing, with round, savory umami, balanced acidity, and subtle sweetness. Serve chilled or warm. $55/720 ml
 

Kamikokoro Umakuchi
Junmai Ginjo Genshu Hiyaoroshi (Okayama)
Shaded gold tint with a nose that suggests fruity sweetness, caramelized sugar, and smokiness. Good weight and fullness to the texture also expressed in the thick "legs" of its viscosity. Bitter note in the finish. Overall, understated with a sneaky deliciousness/umami.

Kikuhime Tokubetsu
Junmai Hiyaoroshi (Ishikawa)
Rich gold color and rich, full-bodied flavor with yamahai funk and sourness. Delicate body and mouthfeel. $70/720 ml
 
Kinoene
Junmai Ginjo Genshu Hiyaoroshi (Chiba)
In the nose, fresh minty and citrus notes, and gorgeous fruity ginjo aromas of green apple and grapes. In appearance, a mild golden tint with tiny bubbles. Sweet, zingy effervescence with a pleasant acidity and overall minerality on the palate. $55/720 ml
